    Manali is saturated. Try Barot which is at real height and going up from sundernagar. Paragliding is available there as well :)

    Manali, Shimla, Kufri are just overrated places. If you want to enjoy the beautiful view of valley and want peace.I suggest you to go Kalga village (Kheerganga) it is a remote area, it can be easily reachable. For more details check out my blog (winter trek to kheerganga).
