Near Manali (on way back) there is a place called Bijli Mahadev. you should visit there. if u want to spend some time in the lap of nature, without noise and commercial shops. it will be a pleasant experience for you

or else opt for river rafting in kullu

Go to a two hour hike to Lamadugh and the Lion King's rock. You get to see Manali town from there and you could see fresh snow there (but not in huge amounts). It is a nice picnic and one day hike spot.
On the Vashisht side you could hike to Jogini waterfalls, there are two trails the lower and the upper one. Take the upper one. It will get you close to the waterfall. It is completely safe and beautiful.
If you could drive then go to Kalath hot spring. That is much better than the Vashisht one.
You could visit the Monastery which is at a distance of 1 km from the Mall road.
