Hi Manali, eight days might be too few to cover both the countries. I recommend you spend the time in one country. Still, if you want to cover both then fly into Phnom Penh Airport (Cambodia) and visit Angkor Wat, Siem Reap, Phnom Penh in three days. On the fourth day take a flight to Hanoi, Vietnam. Spend a couple of days exploring Hanoi before heading to Halong Bay. Explore the surreal beauty of Halong Bay for a couple of days and then head back to Hanoi to catch your return flight. I had visited these countries recently. You can do 2.5-3 days in Siem reap and head to Vietnam. I had started north in Hanoi spending 2 days however I recommend at least 3 days. From there I mover to hoi an where I spent 1 day although you would want to spend more time there. The last stop was Saigon where I spent 3 days. You can spend more time in Hanoi and cover Sapa valley.
