Well there are lot of places to explore in Himachal Pradesh. There's a place called Barot and is at real height! You get to stay there in the camps and that's so much of fun. The place is so cold even in the month of June.

It's going to be really cold so I suggest you ride less and absorb the places. I recommend Chitkul and you can make stops during your ride. Spiti in 7 days can be done but you will be fatigued and Winters are not easy. Start early from Chandigarh /Panchkula, take a halt at Rampur or Sarahan, then reach Chitkul and explore Sangla valley.
