Europe is perfect in the summer! Try to plan every thing months before and you are not gonna spend a fortune....I travelled one month in italy ( august so super high season) from the north to the south and I didn’t spend so much but I booked my accommodation in January.

The only thing is that while Europe can be visited in winters, Russia gets unbearably cold in this season and can only be experienced best in summers.

Europe would be beautiful in summer (late june - early sept) as days will be very long(usually the sunset will be between 9-10pm). You can visit different places both with beaches and mountains like spain,italy and switzerland at once.
