Hey I was planning the same, but kochi was under red zone, so I don't think it's best to visit as if for now. If you still have plans let me know we can travel together

Kedarkantha is an easy to moderate level trek that you can go for if it's your first time, it'll take you through beautiful meadows covered with snow and views of snow clad Himalayas. There are many trek service providers likeTrek the Himalayas, Thrillophillia etc. I've seen some options on Tripoto too, check them out. Hope this helps!

You should check on google map our coast is too big am sire if you just stqrt your trip you could watch your self. i have done coast to cost in kerala only and i can recommend allepey and kovalam

It is not safe at all. once it starts snowing the manali leh highway gets closed. Even if you go it is very difficult to come back. You can get stuck anywhere.
