You may try including Udupi and honnavar because this place also same vibe in the alleppey And following this itinerary: Day 01: Udupi ( malpe beach, st.mary's island , manipal and Hasta Shilpa Village in manipal)
Day 02 : Murdeeswar, Mirjan fort and honnavar (sharavathi kandla mangrove boardwalk and sharavathi backwater boat ride)
Day 03: Gokarna( mahabaleshwar temple,mahaganapathi temple, jatayu teertha, gokarna main beach) Day 04: vibhuthi falls and Yana caves
day 05 : Dandeli

It's safe ? to travel late at night in Bareilly to Nainital on Bike in late Oct.

Yes but, you have cross Tanda jungle area which is very dense and full of wild animal. so there may be a chance of risk while bike riding solo at night from Bareilly to nanital. although road is good and after crossing haldwani ,(kathgodam) hilly terrain will start which will become more tough for driving in late nights.

Both are good in winter based on what you are looking for. Winter is always the best time to visit Goa. The weather would be very good to enjoy the beach. The same way if you want to experience snowfall, Kashmir would be a great place, but please remember it would be very cold during that time.
