We've stayed in Amber Dale Luxury Hotel & Spa, Munnar, although it is little expensive, but hospitality was amazing, staff is courteous and there are nearby places where you can watch Kalari Kshethra (swords stunts by boys and Kathakali ) you can also try tea factory by Tata, and nearby places.
Work trip means you will have will have all related documents in place including proof of stay. you can get Optus or other sim card if want unless your current provider is offering you very economical rates.
You can do it yourself to be honest and find people who can trek with you and your group. If you want i can try and ask some locals to help closer to August.

In case you're visiting Solang Valley to see snow, February is a wonderful time to visit. This is usually the time that snow cover is at its maximum. Do pack sufficient winter clothing and equipment so that you don't end up feeling cold and uncomfortable. However, if you cannot handle so much cold, then February is not the ideal time. You may visit between April - June. Before you plan your trip for Feb, I suggest that you go through the weather forecast thoroughly, chances are that you may encounter rainfall, snowfall or hailstorms that could render roads blocked for hours.
