There are some of the off beat destinations also you can visit in the May like
Vietnam & Cambodia - Its highly under rated but amazing and pretty cheap country. Russia is also another destination where in may the travel season will be just starting so there will be less tourists Also same with the European Countries where Summer Picks up at around June July. You can bet with Thailand also but its a risk because rainfall days will be around 15 days in a month. But you might get some amazing deals
