Spiti valley is best visited during May. Its remote location ensures it is relatively quiet throughout the year. You can take a road trip from Delhi-Shimla-Kalpa (stay at kalpa) - Reckong Peo - Nako - Tabo (stay at Tabo) - Kaza + explore villages nearby (key, kibber, langza, Komic, Dhankar etc) If kaza is crowded, you can find a homestay in the villages or at lossar near kaza. Do visit the chandrataal lake, chicham bridge, Kunzum pass and you can return through Manali via the atal tunnel or you can take the same route back.

All the hill stations would be too much crowded in May but you may visit some rural areas of Himachal Pradesh or Shillong or Lansdowne, Khirsu , etc.
