Haven't been there but I planned it once, same for 7 days and I wanted to cover Istanbul and Cappadocia, Istanbul for 3-4 days and Cappadocia for 2-3 days.
you can also take bus to Cappadocia from Istanbul but flight is also cheap, but yeah airport is kinda far so it's your choice.
