The only way for budget travel is lot of research - about hostels, mode of travel etc. Food is mostly in dhabas enroute. And instead of renting bikes (if you are going for biking), ship your own vehicle from mumbai. Or you can rent a TT in Ladakh for 8 people. For good n cheap hotel u can go for Choszin guest house.. Mr. Nurbo(from choszin) is very helpful and has many properties in leh and nubra.. Zaltak is also his property.. but i would suggest Choszin as it is cheaper n you will get a wonderful view from there.. For food u can explore the main market.. you will also get great bakeries there..
