For good n cheap hotel u can go for Choszin guest house.. Mr. Nurbo(from choszin) is very helpful and has many properties in leh and nubra.. Zaltak is also his property.. but i would suggest Choszin as it is cheaper n you will get a wonderful view from there.. For food u can explore the main market.. you will also get great bakeries there.. You can also refer the below link for choosing itinerary...
