Hampi is an offbeat travel destination and just perfect for those are fascinated about heritage sites. Do visit the famous Virupaksha Temple for its magnificent architecture. Head to Matanga Hill to get mesmerized by one of the best sunrise and sunset view in Hampi. You also enjoy sunrise and sunset scenes from the rooftop of Veerbhadra Temple.
On stay, i would prefer on the river side of the river

On day 1 itself go to hippie island and chill out till afternoon. Then visit very beautiful sanapur lake which offers picturesque views and then visit Anjanadri hill for sunset. Next day early morning do check out from hippie island. Visit monuments of hampi and sunset at Matanga hills or Hemakuta Hills. Also try to visit matanga during sunrise around 6.15am. Views are damn awesome from hilltop.
You can stay in Hospet as it has many good hotels and then you travel to the other side by any local transport facility or you can ask the hotel management as well to arrange one for you

I did solo to hampi last December. The boat service to cross river closes at 5.30pm however there is coracle ride available but it is not certain so better plan during day time itself. I would recommend to stay on the hippie Island. There are tons of guesthouse and homestay, goan corner recommended here. Best sunset/sunrise spots:
1. Matanga Hill
2. Monkey Temple
3. Sunset point (Hippie Island)
All are good for both sunrise and sunset experience.
