You can book by yourself. For Delhi to Manali you can book hrtc bus. Have good experience with hrtc. You can try Iris Cottege and Stays, highly recommended.

Hello Sugandh , my very recent trip was for Manali and I covered so much in just 2 days. I stayed in Apple country resorts , they have all the facilities you need and a great view from the room.
On the first day I covered kasol and manikaaran and a local village in Manali Next day we covered Hidimba temple,nagar castle and a waterfall.
And on the third day we covered Rohtang Pass
