*himachal Pradesh is a major tourist attractions of india and is a vintage jwell too .it's a perfect tourism state. wherever you go , people here treat you like a family and less as the tourist .
*best villages to interact with locals and live with them are tosh , jibhi , khajjiar,kufri, you can explore malana too but you can't touch anything here .the best thing would be finding a homestay locally insted of searching it online .
*alternatively,you can go for a big trek covering many regions of himachal-pradesh and you'll understand locals and their traditions more.

Vasisht near Manali is a good place for outcomers. The place is more cheap and best. Also when you want to find more local peoples then you can go to leh. There you can meet a lot number of tribs who welcomes the outsiders.
You can shuffle between places, you can try notonmap and zostels for some time. Try finding local lodges and people with whom you can work for instead of providing you stay and food.

You can check out Tosh Village near Kasol it's a wonderful place to jell with the locals. Also, you can try the Spiti circuit, that will give you an opportunity to say across quite a few Himalayan Villages and interact with the locals.

There are several homestay options available esp if you venture outside the town area. so you have places like Kasol, Todh, Kheerganga, Parvati valley and a few more which are relatively unexplored perhaps because of bad roads which leaves one with no option other than to trek. this is the reason why, perhaps, you get easy homestay options at very reasonable cost with highly genuine and sincere locals and it is better that way as you will get some inside local info about places to visit that are not very well known in the tourist circle.
