Honestly it wont matter much. If you book by your self its relatively easy if you choose your hotels wisely. There's a direct metro from Airport to all major places . Hardly 4-5 Minutes walk will get you to your hotel. Also there's 'nol' card of you buy that it will be free transport in all the modes of public transportation including ferry. The only thing you will have to take care of is Desert Safari which you can book thru viator or any other platforms

I suggest to go for customized tour ( do your own booking). As Dubai is quite tourist friendly place as well as lot of Indian food joints are available so even food is not a problem, which most of the Indians feel.

If you planned self then u can do it as u want to do but if ur going with package of Tour then it's easy and u can enjoy with ur family

With respect to the UAE a good idea would be to travel yourself as in terms of travel a majority of its landmarks are commercial properties. Moreover, some Airlines provide experiences alongside your flight tickets, you could use those as a slight cheaper, more flexible alternative. Moreover, since most of the UAE isn't on the off beat path a lot of online resources are available to explore the place.

Book the flight tickets on your own since the round trip will cost you around 12-13k.
If you haven't travel much outside and since it's not India and you are with your parents, so book a package and enjoy.

If you are travelling with parents then maybe you would want everything sorted and planned so go for package. There is no big risk in doing the air ticket and hotel separately but why take the chance is what I say. Infact you might get some great packages if you are booking both the airticket and hotel from the same person or website or company. Happy journey!

So would recommend getting a package on airfare and tickets if you can but not for site-seeing as there is so much to do and you can choose and do it on your own time and focus on the places you like to visit there. Self booking always helps you save a massive chunk of money. Agencies are obviously giving you packages at a commission. For flights look up sky scanner or kayak. For accommodation look up reviews on trip advisor and book separately on the hotel website. For sightseeing and food read blogs or watch vlogs to get a good insight of the place you are headed to.
