Hello! the shekhawati zone including jhunjhunu, sikar have really wonderful hawelis, which are so underrated, especially Nawalgarh, jhunjhunu. Banswara and dungarpur are kind of hidden gems of rajasthan, yet less spoken by travellers. Banswara has hundreds of icelands there and is comprised of beautiful small villages. apart of these,Bundi and jalore are no less to explore. I am from Bikaner and the delicacy here is topnotch.
