Yes 3 days are enough to cover Mcleodganj and Dharamshala.
Day 1. Reach Mcleodganj, and go for Triund trek.
Day 2. Roam around Mcleodganj.
Day 3. Explore Dharamshala.

Yes three days are more than enough if you are not doing the triund trekk which i would suggest you to do. Also if you are going for 4-5 days then you can also visit palampur.
It really depends on what you want to do. If you are planning to stay just in Dharamshala and Mcleodganj, 4-5 days are more than sufficient. If you want to visit the vicinity as well, you need to extend the stay. I would suggest to search for the nearby places and choose accordingly and then make a plan.

Day 1
Reach early morning to McLeodganj and check-into your hotel. Once you freshen up, head towards some of the cafes serving authentic Tibetian cuisine. Soak in the pleasant atmosphere and enjoy your meal. Post that, head towards the famous Dalai Lama Temple.

Day 2
Trek to Triund
Triund is the Jewel of Mcleodganj. The snow-clad mountains that you might have seen while relaxing at those cafes, will be much closer when you reach the Triund camping site. Trust me, if you don’t complete this 3 hours trek, McLeodganj visit is incomplete.
Day3
On this day, you will wake up in front of the spectacular snow-clad mountains. It might take time to soak in the awesome sight. As you recover from the beauty, head towards that small local shop and ask for tea. This morning tea will leave you refreshed as you wrap up your tent to start your descend towards McLeodganj

Yes, three days are enough to cover these places. Moreover, if you want a peaceful stay and visit, you can stretch it to four days. Otherwise three days are good to cover most of the spots in Dharamshala and McLeodganj.
