The road condition is mostly good and the weather during January will be pleasant for a bike ride during the daytime and can be too cold during night hours. Fog factor will be there on some roads for morning hours. On some rare days, fog can stay for a whole day, which you should avoid driving in. Sure. You can go to Jaisalmer via Jaipur and Jodhpur. It'll be a great experience as the roads are very nice and also the view. Second- You can go to Udaipur MountAbu and nearby places. It wont cover most of the Rajasthan but both places are just great. Udaipur is super sexy specially in December and January, and Mount Abu is a blessing in Rajasthan. You can try this one too.
