If you can afford it, the floating resort at Poovar is outstanding. Prices are around Rs10,000 per night during peak season but there could be discounts now as the season is only beginning now. Other than the floating rooms, staying at Poovar is not as good as Kovalam.
Kovalam has plenty of rooms and those by the beach are good. Lots of restaurants are operating at that stretch itself so food won't be a problem, whereas you would have to stick to food from the hotel itself at Poovar.

Uday Samudra is a 5 star resort. You don't need to worry about anything. Its has an amazing property, has two restaurants, two swimming pools, and is located right next to a beach. I've been there myself in December. And its totally worth the money
