Its better that you book atleast a day before going there. There are many good hostels but in personal experience, I'll suggest you U.R.D.KI hostel (Anjuna) - This one is definitely the best hostel in Anjuna. Others are- Bedrock Boutique hostel (Baga), The Jungle hostel (Vagator).

Depends on season. Avoid peak season (Nov-jan) and you should be good to go

Yes ..but its better you book in asvance like one day before atleast..because there might be rush
