Lansdown, kanatal, chakrata, if you can extend your time then jibhi teerthan valley is the place for you. ultimate calmness and beautiful nature and awesome trek to saryolsar lake.
Kasauni, Pithoragarh, Munsyari.. These are beautiful and nice peaceful places.

Pangot, Uttarakhand Binsar, Uttarakhand Fagu and Darang in HP
Binsar Kausani Mukteshwar Chopta Lansdown
Try to Chandrashila+chaupta (Little more time consuming, but worthy), lansdown or kasaul

Chaukori is around 12 hours from delhi but it is a real good choice if you are looking for an offbeat destination. It has really nice homestays where you get the local pahadi vibe 😊
