You can cover all beauriful beaches like Panambur Beach, Kodical beach, sultan bateri beach, Tannirbhavi Beach Eucalyptus Forest, Tannirbhavi Beach. I think this is sufficient for 2 days trip, You can also explore the beauty of chikkamaglur while returing from Mangalore
Both have their own Experiences. If you love to go for a trek, be in mountains and want yourself to close to nature, Visit Kasol. But if you want to explore more of beaches, do some water adventure sports and spend nights along the seaside Goa is best.
You can check the official website of Meghalaya. You may have to apply for an E-pass. However, unless and until, you absolutely love the monsoons, visiting Meghalaya until late August may not be a great idea.
Meghalaya is extremely beautiful if you love monsoon but it can get harsh sometimes. I'm not sure whether it is open or not but I saw some posts of travelers on Instagram which suggests that it is open.

I would be working from Himachal as well. You can get internet services in Manali,Simla,Kasol, Bir and a few other places. However, no internet in Spiti or Kinnaur. Plan accordingly. From Kasol , you can visit Tosh and Malana over the weekend. From Simla, you can visit Kufri, Cheog From Manali, you can visit Kullu. There are a few trekking options, like Hampta, Parashar Lake. Please Note: You may not get high speed internet at all places, if that is what you need for your workstation.
