According to my experience, the best time to visit Manali is the season, just after the summers and before the monsoons. That time of year is not jucj crowded, you can visit every cafe and tourist locations easily and intime. You can shoot as much content you want, because it is a soothing climate. I will suggest, visit Sisu and Vashist near Manali at this time of year.
