It is safe to travel Varanasi in January but carry a lot of warm clothes as the winter will be at peak during that time. Also, it will be good to go with a friend or family because you might face some thugs in Varanasi.

You can visit Nainital Mussorrie.. I had visited last year in december. Nice place to be in winters..

It depends on whether you want to just see all the places that the city has to offer or take back with you an experience.
If it's the former, 2 days are more than enough, if it's later, Ghats could so easily take up your 2 days and there would be plenty of left to explore.
p.s. make sure you try all the street food, the city has to offer

*it's always preferable to not to travel to such places when protests are going on related to that region,you may plan your tours to south india aor western India .they too are famous for agricultural, medical, heritage and pilgrimage tourism.
*Southern India has one of India's most visited pilgrimage spots. The prominent one being the Balaji Temple at Tirupati in Andhra Pradesh. Also, the ancient Buddhist site of Nagarjunakonda, and the wonderful Islamic buildings of the Qutub Shahi and Asaf Jahi dynasties at Golconda Fort and Hyderabad reside here.
*West India Tourism. Western India comprises of the states of Goa, Gujarat, Maharashtra, Madhya Pradesh and the union territory of Daman and Diu. It is primarily famous for places like Mumbai, Goa, Rann of Kutch, the cave temples of Ajanta and Ellora and the Wildlife Sanctuaries in Gujarat and Madhya Pradesh.

It depends on the Wifi of the Hotel that you are staying in. I used Jio Hotspot and it worked pretty well for me.
