From Amsterdam, you MUST visit Brugges, Belgium. As there is no direct train, it may be worth your while to go via Antwerp, which is one of the most prettiest Stations in Europe, mind boggling architecture. Make your time in Antwerp a couple of hours to check out the Diamond shops adjacent to the station OR sit and relax with a cup of coffee in the regal Royal Cafe, while awaiting your connecting train to Brugges. Moreover, the trains Of Belgian Railways are just fantastic...the intriors, seats, leg space far far better than even a Thalys. In Brugges, you can visit st anne church, holy basilica, go for canal boat ride, walk down chocolate street, enjoy a brewery guided tour at De haave Mann brewery, check out their flea market by the University along the canal banks. From Brugges to Paris, you can take a train via Brussels. Brugges to Brussels is just an hour. From there to Paris takes another hour by the superfast Thalys. Infact, when in Paris...as Paris is too crowded, you can take a suburban train to Rouen, capital of Normandy. It takes an hour. The trains , again, are good. Rouen is a beautiful, less crowded place, very modern station, very helpful staff and you will find the Cathedral Notre Dame, there, far far more beautiful than that in Paris.
