You can, of course, head to the Himalayas and explore Himachal. From Delhi - Chandigarh - Shimla - Naldhera - Ramgarh - Chitkul :) It'll be a good ride, and you might find snow in the last stretch.
You can also head to Agra - Bharatpur - Jaipur - Ajmer.

Masoorie, worth it. And do take the river side road after Haridwar, through the forest reserve . A day will be enough break the sunset at various Maggi points you cross as you start climbing after Dehradun. And the roads are beautiful, so take enough time to breath along the ride. The Dhabas ofcourse are available all along the road when its time for lunch. Well all this depending you exit Delhi before its jammed in the morning. Safe and Happy riding!
