What are the good options available to visit around Pune at present as most of the tourist places are closed. Any recos for resorts where one can plan to stay for a day or two?

Do visit Fort Jadhavgarh - it is a wonderful option for a 1-2 night stay. I visited in March 2021 and all covid 19 protocols were strictly followed. Check out my trip to Fort Jadhavgad on my page.
