If you want beaches full of people from India and Abroad, Night Markets etc, the Dec-Feb, but obviously with prices upto 3 times the normal rates.
If you want peaceful time, with water activities etc, then Mar-June or Oct-Nov, but it's pretty hot this time.
If you want amazing weather, rain and greenery, then Monsoon July-Sep., but no water sports and less crowd.

*distance between hydrabad to Coorg is 775 kms approx and takes 15 hours for a direct journey ,but since this is little bit busier route ,I have a small plan suggestion
Day:1
Hyderabad > Bangalore > Mysuru
Hyderabad to Coorg is very hetic, split your plan.
Day:2
Mysuru > Bandhipur > Coorg
Start early in the morning and visit Bandhipur forest safari.
Explore Coorg, commercial places.
Day: 3
1. Mandalapati Jeep ride (Don't miss it, Start early in the morning from Coorg)
2. Abbey waterfalls (on return)
3. Rajas seat (on return)
Day :4
Visit regular commercial places.
Drive back to Mysuru in the evening and visit Mysuru palace
Day: 5
Mysuru to Hyderabad

I can't give you a detailed itinerary, but I can suggest some places that you must definitely not miss visiting,
1. Belur and Halebid
2. Hampi - Stay at Gopi Guest House
3. Charmadi Ghat - This can be a one day return drive
4. Udupi - Stay at the Welcome Hotel in Manipal
5. Pondicherry - Airbnb's, but make sure you stay in the French Colony, also visit Auroville when here
6. Alleppey - Houseboats, most definitely
7. Coonoor - Neemrana Hotel in Coonoor has to be the best bet
8. Kanyakumari
9. Rameshwaram
10. Trivandrum - Taj Kovalam, beautiful and elegant, stay here for a day at least.
For places to stay, you can look up Airbnb, they're the cheapest of the lot and the most convenient, that's what I've realised.
