You cab head to Chitkul. Its near Shimla in the Kinnaur district. You can also head to Kalpa village in Kinnaur district again. When I visited Chitkul, it was covered in snow. The I reached Kalpa, I experienced 5 hours of snowfall and the entire village turned white. Not many people know about the village so it is not at all commercialized and you will be close to the nature like never before.
Go for a trek. There are many treks which will take you face to face with some snow covered mountains.
Treks in the Himalayas should be a must in a travellers to-do list.

You can travel to Munsiyari Uttarakhand. A small town located at the base of the Himalayas. It's name literally translates to being 'A place with snow'. Not a very popular destination yet, it's slowly making its way through as a tourist hub. Due to its enchanting beauty and raw natural surroundings, it's been given the tagline of being 'Little Kashmir'.
