Hi Raghav! Jibhi/Tirthan Valley area is an excellent choice to enjoy the oncoming winters. I'd like to suggest you - to be prepared for chilly weather at night. - The roads get narrow and uneven as you enter Jibhi, so dont drive yourself unless you've good experience in driving on the hills. - Try staying at homestays, they are much cheaper as compared to hotels.

In Kathmandu go to Pashupati Nath and Hanuman Dhoka and to the mountain flight. Post that go to Pokhara, Dhampus and Annapurna base camp

You can have a pleasure drive to manjoor ( outer Ooty) which is a village admist tea plantation and visit emrald lake, avalanche lake .you can even plan of visiting kotagiri which is a bit far but worth it
