You could visit the Jatiluwih Rice Terrace, it's a UNESCO site. It's quite beautiful and not a common spot.

There are a lot of non touristy things.
If you like surfing you can learn and go surfing there.
The local drinks there are
1. Bintang beer (try the raddler) it's something different
2. Bali Hai is also a local beer
3. Prost is another local beer. You can relax in sanur for a relaxed beachwalk. Or even nusa dua or ubud for that matter is decent without much public

Hi you can for sure volunteer in Ubud, teach English to the kids.
learn surfing definitely try Indonesian food served at Warnings ( filling and not expensive)
