Hi Devina, there are different requirements for each embassy in Schengen states. You can either apply for the Schengen visa in an embassy that doesn't require an employment letter. Or, in your case you can submit a copy of your resignation letter from the current organization along with a copy of the signed offer letter from the new job. If you haven't resigned yet then get the employment letter first, apply for the visa and then resign.
