If you are interested in some Buddhist site please do not miss Anuradhapura (oldest Capital), when in Mirissa do go for whale watching, who knows you might get lucky. Mirissa beach hosts a free DJ party once a week (not sure Wednesday or Thursday but ofcourse you have to buy your drinks) Hope they still do...haha. Kandy is beautiful too, more like Udaipur in India. Galle is also not to miss. Banderwala is the place you can take a train to/from for amazing tea garden views. I loved this country. Enjoy.
In international, you can visit Switzerland, France and other European countries as climate will be pleasant in India, you can visit North India , leh Kashmir, Jaipur, ajmer .. nad a pleothora of places
It depends a lot where will you be traveling from and kind of place like mountains, plains or beach. Although you will find Gushaini (and few other places in Himachal Pradesh & Uttarakhand), Darjeeling and Sikkim really pleasant at that time. If It's early May try tiger sighseeing at Ranthambhore or Bandhavgarh.
Try Bharatpur for bird watching, drive up to Kasol and trek to Jalori pass, Drive to Gushaini and few treks from there too. You can also try driving to Neemrana and do ziplining operated by Flying fox (really amazing) or Hastinapur Wildlife Sanctuary near Garhmukteshwar.
It will be a bit strenuous as the distance is too large.

Your minimum budget should be 30,000 for the whole trip. I know this sounds ridiculously low but that's reality. The hostels there are very cheap and you can go couch surfing. It reduces the cost of stay significantly. You can also simply eat some packaged food to reduce the budget of the trip and travel by local transport. You will easily be able to do the trip in this price. Let's break it down, you thought Europe was expensive, but if you budget it right, your trip was never this cheap!!
Eastern Europe is cheaper than the rest of Europe...i hv visited around 16 countries in Europe but the cheapest places were Budapest, Prague & Bucharest, Romania. All 3 are amazing.
Chiag mai is also good place if u ask if its worth deleting other places its upto u to understand wht you need beaches or the special food and white temple and thai culture.
You should plan it this way. I have been there multiple times, generally I go to Phuket for 1 day and visit the beaches and enjoy the culture. I spend two days at Krabi because it is less crowded and its a more chill place to be eat. The party scene is very good at Krabi and is certainly better than the other two places. I suggest that you go to Phi Phi Island for 2 days because there are a lot of activities over there ranging from full one day kayaking tours, to parasailing and island snorkelling. It is paradise for beach activities. You can easily skip Chiang Mai and enjoy the beaches. You can explore Thai culture is Phuket too but you can't enjoy beaches like Phi Phi anywhere else.
I have been to Hua Hin, Chiang Mai & Chiang Rai...these are the less touristy places, each having their own charm... The nights markets are a must visit.
