Shimla Manali etc are too cliche and thus are always overcrowded. Try some off beat destinations in Uttarakhand or Himachal Pradesh. You can try Barot Valley, Bir billing, Tirthan Valley, Parvati Valley, Narkanda, Kinnaur, Harshil Valley, Musiyari etc
