I dont think you have to book a package tour. Kerala is relatively inexpensive if you research a little since public transportation including Volvo low floored buses as well as normal passenger buses are easily available. Even within cities, UBER/OLA is available and hence you can save a lot if money. The accommodation can be pre-booked using any travel app. And to help you with the itinerary, a number of tour providers publish the packages. You can refer those.

These are winter months in Spiti filled with extreme weather conditions, lack of basic necessities like electricity, several road blockages, water freezing in taps, and almost no hotels offering accommodation. A number of road links at this time on both the routes are closed. If you still make plans, be sure of you mental and physical fitness as there can delays and a lot of risks.

Trekking to Har ki dun but its not recommended because in mountains weather is an issue, it can change drastically within short period of time and there are also issues with wild animals and other things. So its better to go with some credible travel agency, there are no canteens throughout the trek so for food you will have to go some travel agency and you will also have to carry sleeping mattress, sleeping bag and tent also if you go with some trekking agency you will have toilet tents otherwise you will have to go in open, that is an issue. For gurudongmar u will have to go to Lachen from Darjeeling and then from there early morning you can start for Gurudongmar. Directly from Darjeeling it will be very difficult to travel. Cab cost for 2 days will be around 9000 Including permit.

If you planning to stay solo then I'll suggest you stay at hostels in Amritsar you can stay at Gostops which is a budget-friendly hostel and in Amritsar, there are various activities which you can opt for such as Visiting Gurudwara(Golden temple), you can take a food tour(cholekulche and firani), some shopping tour. Must visit Jaliyawala bagh and Wagha Border parade and Partition Museum Now from Amritsar, you can go to Dharmashala where you can visit Cricket stadium it is one of the highest sports ground in the world and from there you can visit Mcleodganj here you can stay at various different hostels such as the international youth hostel you can enjoy the nightlife of Mcleodganj and enjoy delicious food on streets while shopping in little Lhasa market. places to visit there are Bhagsunag temple, Tibet museum, Dalai Lama temple etc.
