You can definitely go upto Manali atleast assuming you would be ok with riding 600 km at a stretch. You can take a break at Chandigarh if you please, and also explore the city. It is one of the cities with the best grid in India. Just keep all the bike papers ready, service the bike well before going, keep enough supplies and water with you, also extra tubes and a puncture removal kit. You may have to carry your vaccination certificate and RTPCR test result (check with local state border rules before leaving).
