Head over to Spiti, it is ideal. The tourism there extends there till November first week. August is the month of heavy downpour and landslides in Himachal. But September, you see, is the ideal blend of clouds and sun. You'll cherish each and every moment. Let me know if you have any queries on this. Happy to help.

Kerala is definitely stunning during the monsoons as the rain washes the state clean and the greenery is at its brightest. But this also means that the roads will be wet and slippery and thunderstorms might mean you will have to take breaks more frequently. If you are up for the challenge, you can read about this traveller's experience on a road trip in Kerala: https://www.tripoto.com/trip/best-bike-road-trips-in-kerala

The trek take around two days and one night. It is definitely safe for two people to go on this, as long as you take a guide along. Someone professional who will be better at directing you.

If you're looking for river rafting options in South India, then I suggest you consider Dandeli in Karnataka. Apart from a fantastic river rafting experience, Dandeli also offers night camps, nature walks, boating, bird watching, tiger and crocodile spotting, and even trips to nearby caves and temples. For details, check this out https://www.tripoto.com/trip/dandeli-karnataka-things-to-do-in-and-places-to-visit-around-itinerary
I second Gunjan.. Dandeli s an amazing place to do white water rafting, kayaking, jungle camping, etc. We stayed at Flycatchers Resort who were the main operators of all water sport activities there. Hereby sharing the website link.. http://www.flycatcheradventure.com
I would suggest you to do it with a guide as the Bhrigu Lake trek is classified as a trek of moderate difficulty. Apart from the route, the guide can also help you with accommodation and food!

For your first solo trip, I suggest you go to Spiti and save Ladakh for some other time! You can spend the night at Chandratal as the campsite is just 30mins from the lake.
