Sorry i missed out Mussoorie. You can board the Mussoorie Express from Old Delhi leaving at night. From Dehradun take a shared cab to Muddoorie. Places to visit - Kempty falls, Gun hill point, Radha Bhawan, Lord Everest's house, Bhatta fall, etc. You can stay at GMVN Mussoorie again for decent price and very safe too.
If you looking for fastest way to reach from Amritsar to Manali is to take Indica from amritsar to manali it takes 6-7 hours time and the cheapest way to reach Amritsar from manali is to take Shane Punjab from Amritsar to Jalandhar then take State Transport Bus from Jalandhar to Manali it's will takes 17-18 journey. Delhi to Manali distance is about 564 kilometres. The route from Delhi to Manali by road travel is a long journey and can be tiring though the route is beautiful. Travelling from Delhi to Manali by car is the only mode of transport apart from bus between the two places. and it's completely safe route to travel at night.

Similarly, multiple buses are available from Manali to Delhi which can also be booked online or from the Manali bus stand. Besides, you can also hire a taxi to reach Manali or Delhi, but the fares may be quite high.

To my notice, there isn't a neat and clean hotel at the falls premises but there are some budget hotels nearby( out of the falls premises) and few Luxury hotels in Shivamogga(a little far away).

Well, Rajasthan at Nov is not a bad idea. You get a blend of seasons. From my experience, I suggest you to carry a minor winter equipments because it rains even in Summers at other places of attraction in Rajasthan namely Jaipur, Jodhpur,.....
Well visiting OOTY is not a bad idea. There are government transport facilities and also private, but do check out the Forest Bandipur's gate opening and closing times. Usually the gates close at 6PM for entry and 7PM for exit. You can check out the exact departure of gov. transport at ksrtc website.

I visited Amsterdam in August myself. The visa application might seem scary at first, but that's just a myth. The process is super simple. I believe you will require a Schengen visa, which allows you to travel in 26 EU countries. First, book an appointment with VFS Global. Next, ensure you have all the documents on the check-list.
Here's the link to checklist - https://www.schengenvisainfo.com/schengen-visa-application-requirements/ You will receive a tracking code, to check the status of your visa procedure. And an email notifications if your visa has been approved, which usually is the case. After that, your passport along with the Schengen Visa stamp in it will be delivered to your home address. It takes 1 week for the visa to be processed after appointment with VFS. But, on a safer note, I'd recommend you to give yourself 2-3 weeks.
