The non-vegetarian thali featured a robust Laal Maas, while the vegetarian spread included gatte ki sabzi, paneer curry, and a variety of pickles and condiments that rounded off the experience with earthy complexity.

Even the simplest dal stood out, prompting a conversation with the resort’s affable chef, Laveen Mathur.
