Depends on what kind of trip you want this to be and how many days you are willing to stay at each place... Udaipur has some really nice hostels near the lake area, just check out hostels on booking.com or any other website and you can easily spend 2-3 days in Udaipur, evening walks are great and there are some really cool restaurants around the lake, if you are lucky u could find some place with live music there Gujarat as a whole is pretty boring if you are not into food, highways are full of trucks and it highways do get boring Mumbai could be fun if u stay for a few days atleast, coz in passing u ll have to go through thane in heavy traffic and it won't be very nice Goa and Gokarna are sort of similar in terms of terrain gokarna ll be less crowded, if you like crowds stay in north goa (Anjuna/Vagator etc) if you like less crowded places go to south goa you can easily spend a week there at palolem or agonda, there are hostels around and south goa is closer to gokarna too I did Bangalore to Goa to Himachal this year on my bike it was fun but a lot of road to cover in less time can make the trip boring, I will recommend choose 2-3 places where you want to stay for long and other just pass in transit

Firstly you will need permit in advance from Kochi authorities to be allowed in Lakshadweep. Also, wherever in India you are based, you will have to go to Lakshadweep through Kochi only (even flights). In 3 nights you can cover islands like Agatti and Bangaram or thinnakara. Water activities, snorkeling, diving is pretty much done everywhere, it's the different islands one needs to stay at.
You could try visiting Minicoy island
