That will be great to visit Udaipur in this season. Winter is coming and you can have a good time there. For budget Transport, you can take State Transport buses, best for travellers. In Alwar and Udaipur, there are many budget hotels or guesthouses available. It really depends upon your budget actually. You can enjoy local food or street food there. Just be aware from thieves.

The first thing that comes to mind with trekking is mountain climbing but that's not what it is all about. You can try some off beat trek. Try Kumta to Gokarna, it's beach trek one can enjoy.
Arghya, Modhva Beach observes the arrival of migratory birds including Flamingos between November and March only. Moreover, in this time, it is not necessary that you WILL find flamingos, since birds don't necessarily follow human schedules. Yet many species of birds show up here almost every year at this time including flamingos. Mandvi is about 12km from Modhva whereas Bhuj is around 64km. It depends on your itinerary and where you plan to come from.

Best time to visit the Islands is during the winters (November - February) when the temperature ranges between 20°c - 30°c. The weather during winters stays mild and pleasant throughout.
