15 days to single destination might not be that great of an idea caus a week later we all start getting bored, so you can plan a whole area. For eg. starting from north east you can move towards east or north, staying for 2-3 days at each place and traveling in night to avoid hotel expenses and wastage of time! There are many places u can visit in manali but the place u must go is " jogini falls " they are very beautiful. You can also visit places like hidimba temple , valmiki temple , Buddha monastery & mall road. Around manali u can go to Solang valley where u can adventure the paragliding if u really want to enjoy scenic view then go to rohtang pass. Hope you enjoy and a very happy journey.
Yes you can cover both in the same trip. 4 days at each of the place are idea. The connectivity to bangkok would be higher from mumbai, so you might get cheaper deals. Then you can fly to phuket from bkk. There are direct flights to phuket from mumbai too.
Spend one night on houseboat it's a very good experience. But one may get bored if it's more than one I believe. Beaches of Alleppey are also very beautiful so, you can try any resort near beach.
