I think Gokarna would be a good option but I am not sure about water adventures. However, you can have some trekking and camping adventure at some of the beaches and on some hills around Om beach.
Depends on how many people you're, I would suggest to have a group of people to camp because I have heard it is not too safe to camp alone or as a couple on top of the hill. You may pitch your tent at the beach. That would be safer.

I was in Goa from 7-10th of March. COVID-19. has not affected the tourism in any way. As long as you take all the precautions there's no risk as such. It was 15 of us and all of us are completely healthy as of now.

We had done a similar round trip in December. Our start and drop was Bangalore, We drove to Mysore, spent 3 nights there and then drove up to Ooty, spent 3 nights there and then drove back to Bangalore, as our train was at 8PM from Bangalore.
From Bangalore to Mysore we stopped for brunch at Kamat, musn't miss it, their Dosas and idlis are special and one should not miss it.
In Mysore visit Brindavan Gardens, Chamundi Devi temple, Mysore Palace. If you have time visit some other palaces.
In Ooty take the Toy Train journey to Coonoor, but book your tickets in advance. Other places are Rose Garden, Ooty lake, Tea Factory etc.

Yes you can go. as it's a small town and you just have to count on time . if your stay is near beaches then you can enjoy to the most. Else it's not safe to travel alone to beach late night.
