Hey Kajal, The best way to reach auli from delhi would be :- take an overnight train to Haridwar from Delhi ... And then a cab or a bus from Haridwar to Auli ... there are daily buses plying in this route ... it's a 10 hour journey ... Happy Travelling!!!
Reaching from Delhi to Auli can be done in the following two ways : OPTION -I By Road Delhi to Auli and back - (Cons) 1. Heavy fog can make the road journey long and uncomfortable. 2. Drivers from Delhi are not accustomed to local routes and familiar with hill driving so it might be an issue hiring a cab from Delhi. OPTION -II Delhi To Haridwar Via Train Haridwar- Auli- Haridwar Via Cab Delhi till Haridwar. Catch train that runs in evening / late night from Delhi and reaches Haridwar early morning so after a brief halt, you can proceed for Auli.
Car Rentals charges will be approx INR 12500 for Swift Dezire/ Toyota Etios/ Indigo.

In January there will be a normal rush, it will take nearly 3 hours to get enter the Bhawan and about climate, it will be very chilled and you need at least as warm clothes, otherwise, you can check the weather condition at google before 2-3 days. and there are lots of hotels from cheap to luxury so after reach there you0 can select the hotel according to your budget. A house party can be a good option to celebrate the new year in Mumbai. This can be a budget-friendly party option. You can have a good time, playing games at home. Either you may have food cooked at home or you may opt to order food from outside. This can be quite enjoyable.
Other than this I don't think I would recommend places as you told you to have a 3-year child with you. Too crowded.

Technically there are more than 40+ vineyards in Nashik spread across the length and breadth of the city. Sula, York, Mercury, Zampa Grover are few iconic places where you can spend some quality time. Sula runs their own resort which is approx 2 KM away from vineyards.
