Hello Gautam,
On a personal note, I would suggest Darjeeling over Gangtok, mainly because of the natural beauty and magnificent view of Kanchendzongha ranges that it offers. The colorful life in a hill station can be enjoyed more in Darjeeling.
For more details, you can visit on the following websites;

Darjeeling is located on the east part of Himalayas called as queen of hills which is filled with abundant nature to explore. Gangtok capital city of Sikkim which faces Mt.Kanchenjunga is filled with rhododendrons, natural beauty and some peaks that are purely mesmerising. Meghalaya called as abode of the clouds, with Shillong as it’s capital is the best climatic, nature beautiful spot of North east. My advice would be Darjeeling or Meghalaya. From Darjeeling Gangtok is 3 hours away. So while visiting Darjeeling you could cover Gangtok as well.
You could check out for packages at MMT or Thomas cook. Else you could start with Malaysia-Singapore cover both countries within 10 days then travel towards Vietnam-Bali another 10 days then enter Hongkong, travel to Taiwan then explore full of South Korea. You need atleast 20 days to cover. So on the whole a full month is much needed to cover these countries.

Seems to be no problem with Suzuki gixxer ride to Manali. It’s a lovely bike, and has undergone test drive in highways. If you plan your ride accordingly, knowing do’s and dont’s of your bike, along with weather check, then your ride proves fine.
July is called as monsoon month of Leh. There won’t be any snow seen around. It is an ideal time to camp. Any route to Leh is safe, provided to do a weather check on the day you start your ride..
Remember Very less chances of Seeing snow, and in the 15 days of July this entire region (jammu to leh) faces maximum temperatures. i visited in the last 15 days of july last year and had to face this heat on our roadtrip . safety wise its quite good to travel during this time. if you can travel in first 15 days of july it would be better.

So, I am pretty sure you will like it.
It is called as frozen river trek which is trekked under guidance. It’s minimum 6 days trek. The whole path is snow covered and weather seems to be harsh, though it is not a tough trek. Weather drops terribly, while there is a list of do’s and dont’s before starting the trek. This trek starts from Leh.
Yess chaddar trek but if you have done trekking before and if you are fit enough to control the cold temperatures then it's best place and you should be so careful bcoz it is the most difficult trek in India after mount Everest
