Traveling Hampta pass would not be a safe and easy option in winters, Would recommend you to not to plan because in this season you will not be able to have permit as well as entry for going there is permitted, It's a huge block ways in between the ways , You will be able to visit till Solang valley & Gulaba , after that their are many restrictions.
I would like to recommend you to go there after April or May

In Cochin you take your son to Marine Drive & Fort Cochin.
From Cochin Athirapally falls is just 80kms approx, Ur son can find lot of fun there & it is safe place also.
Alappuzha Back waters will be amazing which is just 60kms from Cochin.

Fort Kochi, allepey and kumarakom. Won't be able to cover munnar so it's better you stick with back water rides in kumarakom and beaches of allepey even back waters and Kochi in general.

Yes you can cover both in the same trip. 4 days at each of the place are idea. The connectivity to bangkok would be higher from mumbai, so you might get cheaper deals. Then you can fly to phuket from bkk. There are direct flights to phuket from mumbai too.
