Honestly, if you want to do justice to your Sikkim Tour, dedicate all 7 days to Sikkim alone, cover west Sikkim and north Sikkim also (besides Gangtok etc) which are amazing (I understand that there is a direct flight from Delhi to Gangtok now as Gangtok Airport is operational, pl check up). I don’t foresee any issue with your 2 Y old (just keep him adequately warm during journey and when outdoor).

There are two ways to reach One is by flight from Jodhpur to Saradar Vallabhbhai Patel airport from where by cab or bus or self drive 7hrs you are in Kumbhalgarh. second is via train to Ahmedabad then bus to udaipur, and then cab to Kumbalgarh. Coming to reaching Chittorgarh If you take a cab from Kumbalgarh it is 4hrs journey. If you prefer train it is 5hrs from Udaipur, where to reach udaipur you have to take a cab from Kumbalgarh.
